The best base solution is salt and milk, you can mix 1/2 cup salt in 2 or more cups of milk to cover the fish, soak overnight, rinse well in the morning and cook or freeze!

Lingcod Marinade:

Lingcod is a white fish found off of the west coast of the United States. Lingcod has a mild flavor with a slightly firm texture and large flakes when cooked. Lingcod is a lean fish and does best with an oil-based marinade. Any of our oil-based white fish marinade recipes will work perfectly with lingcod fillets. Try any of our grilled fish marinades for lingcod. 


  • One Cup of EVOO
  • One teaspoon of salt
  • 1/4 teaspoon of pepper
  • One tablespoon each: dried oregano, dried basil, dried thyme, and dried rosemary. 


  • Combine all the ingredients into a bowl. 
  • Coat your fish fillets in the herb marinade and chill in the fridge for 1-2 hours. 
  • Cook fish fillets using your desired cooking method.

Asian Tuna Steak Marinade:

This recipe is one of our favorite marinades for tuna steaks. The combination of tender Ahi tuna with sweet (brown sugar), and spicy (chili sauce) make for a sweet and savory seafood meal.  


  • 1/3 cup of soy sauce
  • 1/3 cup of brown sugar
  • 1/3 cup of water
  • 1/4 cup of EVOO
  • Two tablespoons of chili sauce
  • One tablespoon of freshly grated ginger
  • Salt and pepper to taste
  • Two cloves of garlic, minced


  • Combine all of the ingredients in a bowl. Add your water slowly. You may not need the full 1/3 cup of water. You just enough water to cover your fish fillets in the marinade. 
  • Marinade your fish for thirty minutes and up to one hour. Do not rinse your fish before cooking. 
  • Cook your seafood using your desired cooking method. If you’re looking for a low-sodium salmon marinade, substitute your soy sauce for low-sodium soy sauce. 

If you’re looking for a tuna steak marinade with soy sauce and brown sugar, look no further. 

This tuna steak marinade has all of the classic flavors of Asian cuisine. The freshness of the ginger and the savory saltiness of the soy sauce compliments tender texture and mild flavor of the ahi tuna steaks. This tuna marinade with ginger would be delicious with thinly sliced tuna over a bed of mixed greens. This marinade would also make an excellent Asian shrimp marinade. 


  • Juice from two limes
  • Three tablespoons of olive oil
  • Two teaspoons of finely minced ginger
  • Two cloves of garlic, finely minced
  • 1/4 teaspoon of chili powder
  • Salt and pepper to taste


  •  Combine the ingredients in a small bowl. Season with salt and pepper to taste.
  • Place your tuna steaks in a baking dish or a large ziplock bag. Pour your tuna steak marinade recipe over your Ahi tuna steaks. 
  • Chill your marinated tuna in the fridge for up to one hour. 
  • Cook your tuna steaks using your desired cooking method. This recipe would be a great seared tuna marinade or a grilled tuna marinade. 

Lime, ginger, and chili create one of the best marinates for tuna steaks. If you’re looking for a tuna steak marinade without soy sauce, try this chili-lime tuna marinade. 


  • 1/4 cup of balsamic vinegar
  • 1/4 cup of brown sugar
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste


  • Mix all of the ingredients in a small bowl. 
  • Place tuna steaks in a baking dish and pour balsamic marinade over your tuna steaks. 
  • Chill your tuna steaks in the fridge for 30 minutes.
  • Cook your tuna steaks using your desired cooking method.  


  • 1/4 cup of olive oil
  • Juice and zest from one lemon
  • Four tablespoons of fresh chopped herbs of your choice. 
  • Two cloves of garlic, minced
  • Salt and pepper to taste


  • Combine the ingredients in a small bowl. 
  • Pour the lemon marinade over your Ahi tuna steaks and marinate the fish for 30 minutes. 
  • Cook the lemon marinated tuna using your desired cooking method. This recipe would make an excellent grilled tuna steak marinade.  

 Tuna is a firm fish that can take a lot of different flavor profiles. It’s ok to want to experiment with the flavors, try any of our marinades as tuna steak marinade recipes, and let us know what you think!

Have all the ingredients you need ready.

Preparing and marinating the fish

Cut the tuna into cubes(500g), if you are unable to do this, you can get them precut from fish stores or your fishmonger. 

Place in a bowl, add a pinch(1/8 tsp)of turmeric.

Mix well and rinse the fish twice. drain any excess water completely. the tuna cubes need to be dry.

Place the fish cubes in a bowl. add pepper(1 tbs), red chilies powder(2 tsp), salt to season(1/2 tsp should do).

How to fry the fish cubes

As mentioned earlier on the post, you can either deep fry, shallow fry or use an air fryer for a healthier option.  deep fry to a golden brown.

Deep frying

Pour oil(2 cups)into a deep frying pan and gradually bring the oil to low-medium heat. avoid oil from smoking. fry the marinated fish in small batches. you might also want to keep your windows open or the exhaust fan over your stovetop on high. 

Shallow frying

I chose this method. a longer time was needed as I had to constantly turn the fish pieces individually to give all of them an even fry.


Follow instructions given on the appliance.

Place the fried fish over some paper towels to absorb any excess oil.

Making the devil fish sauce

Onions(2 medium), tomatoes(3 medium), capsicum(4, substitute with bell peppers)need to be cut into thick pieces.

Place wok over low-medium fire. add oil(2 tablespoons), add garlic(1 tbs) and ginger(1 tbs), green chillies(2). cook for a few seconds until they release their aroma.

Add the green peppers, cook for 3 minutes and then add the onion and tomato wedges.

Cook over medium heat for 2-3 minutes until they soften.

Add tomato sauce(1/4 cup), soy sauce(2 tbs), red chilli flakes(2 tsp)

Only add thick coconut milk(1/4 cup)if you need extra gravy, skip this ingredient if you want a dry deviled fish stir fry.

Cook for 3-5 minutes over low medium heat.

Taste and adjust the seasoning as per your need.

This could mean adding more tomato sauce, more red chilies flakes, salt to make it a sweet and spicy variation.

Once you have the deviled fish sauce ready. add in fried fish to the sauce.

Gently combine the sauce with the fish and cook over low heat for 2-3 minutes.

Serve warm.
